Mindful Eating Recipe – Kale Chips

I love steamed vegetables, but sometimes I get tired of tender, salted greens. This recipe is another relic from my recent visit to Boulder – I’d had kale before, but never kale chips! To me, nothing says mindful eating like a familiar food prepared in a totally novel way. New flavors and textures invite an awakened attentiveness. There are dozens of ways to season kale chips. Here is one suggestion for seasoning one bunch of kale:

1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon sea salt
1 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon nutritional yeast

Bake on a cookie sheet at 350 degrees until the edges are brown but not burnt, about 10-15 minutes.
