Fennel – Simple and Fresh

This summer, simplicity is a theme.

The Scorpion Seal Assemblies are setting a new culinary tone at practice centers throughout the mandala.

Practice center kitchens are stepping up to the challenge of creating meals that are fresh and simple without the “entertainment” of spices.

Fresh herbs are in. Garlic and onions are out.

What’s cooking at Shambhala Mountain Center? Here’s a recipe for Poached Tilapia with Fennel, a clean taste perfect for any summer day.

Poached Tilapia with Fennel

Lay several 8 ounce tilapia fillets flat in an oven pan.
Mix the following ingredients and pour over the tilapia:

2 cups white wine
1/2 cup olive oil
1/3 cup fennel – chopped
1/4 cup lemon juice
1 tablespoon salt

Cover with foil and put in a 375 degree oven for approximately ten minutes.

  1. I worked there one summer and was meaning to find out this myself it slipped my mind, as did allot of stuff. I did just return from there about a weeks ago and noticed this one “Madhur Jaffrey’s World Vegetarian “. I have wrote a friend who still work there and asked her for the others, Ill post when I find out =) Such good food!!
